This chicken and roasted vegetable bowl combines cumin-spiced chicken, crisp-edged chickpeas, colorful vegetables, brown rice, and a bright lemon-tahini sauce. Most components cook at the same time, so the recipe works for a weeknight dinner as well as make-ahead lunches.

Ingredients

For the bowls

  • 2 boneless, skinless chicken breasts (about 400 g), sliced into cutlets
  • 1 can (14 oz/400 g) chickpeas, drained, rinsed, and dried
  • 1 medium zucchini, cut into half-moons
  • 1 red bell pepper, cut into strips
  • 1 cup cherry tomatoes
  • 1 cup cooked brown rice or quinoa
  • 2 tablespoons olive oil, divided
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Fine salt and black pepper
  • 2 tablespoons pumpkin seeds and chopped parsley, for serving

For the lemon-tahini sauce

  • 2 tablespoons tahini
  • 2 tablespoons fresh lemon juice
  • 1 small garlic clove, finely grated
  • 2 to 4 tablespoons cold water
  • Pinch of salt

Method

  1. Heat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Toss the chickpeas, zucchini, bell pepper, and tomatoes with 1 tablespoon olive oil, half the cumin and paprika, and a pinch of salt. Spread everything in a single layer. Roast for 20–25 minutes, stirring once, until the vegetables have browned edges.
  3. Pat the chicken dry. Season it with the remaining cumin and paprika, garlic powder, salt, and black pepper.
  4. Heat the remaining tablespoon of oil in a skillet over medium-high heat. Cook the chicken for 3–5 minutes per side, depending on thickness, until the center reaches 165°F (74°C). Rest for five minutes, then slice.
  5. Whisk tahini, lemon juice, garlic, and salt in a small bowl. It may thicken at first. Add cold water one tablespoon at a time until the sauce becomes smooth and pourable.
  6. Divide rice, roasted vegetables, chickpeas, and chicken between two bowls. Spoon over the sauce and finish with pumpkin seeds and parsley.

Timing the Components

Start the vegetables first. While they roast, season and cook the chicken, then whisk the sauce during the chicken’s resting time. If you need to cook rice from scratch, begin it before heating the oven. Using leftover rice makes the full bowl possible in about 30 minutes.

Ingredient Swaps

  • Use quinoa, bulgur, or couscous instead of brown rice.
  • Replace zucchini and bell pepper with broccoli, cauliflower, or sliced red onion.
  • For a vegetarian bowl, omit the chicken and roast a second can of chickpeas or add baked tofu.
