Step-by-Step Instructions
1. Prepare the spices
In a bowl, mix the cumin, coriander, cinnamon, turmeric, and paprika. Rub the chicken thighs with this spice mix and let them rest briefly to allow the flavors to penetrate the meat.
2. Brown the chicken
Heat the olive oil in the Tajine or a Dutch oven and brown the chicken on both sides until golden. Then remove the chicken and set it aside.
3. Sauté the vegetables
