This pineapple ginger smoothie balances sweet frozen pineapple with fresh ginger and lime. Coconut water keeps it light, while banana is optional for anyone who prefers a thicker, creamier drink. The recipe makes one large serving in about five minutes.

Ingredients

  • 1 cup frozen pineapple chunks
  • 1/2 cup coconut water, cold water, or unsweetened plant milk
  • 1/2 inch fresh ginger, peeled and thinly sliced
  • 1 tablespoon fresh lime juice
  • 1/2 small banana, optional
  • 2 or 3 ice cubes, only if using fresh pineapple

Method

  1. Add the liquid and lime juice to the blender.
  2. Add the ginger and banana, if using, followed by the frozen pineapple.
  3. Blend on high until smooth. Stop and scrape down the blender jar if a piece of pineapple sticks above the blades.
  4. Add another tablespoon or two of liquid if needed, then blend again.
  5. Taste and add a little more lime for acidity or a small amount of sweetener if the pineapple is not fully ripe.

Practical Blending Tips

Put liquids in first and frozen fruit last. This order helps a standard blender form a vortex instead of trapping fruit beneath the blades. Slice the ginger thinly so it disperses evenly. A high-speed blender can handle a larger piece, but starting small gives you better control over the heat.

If you use fresh pineapple, reduce the liquid slightly and add ice. For a spoonable smoothie bowl, use the banana and begin with only 1/3 cup liquid.

Easy Variations

  • Add a few mint leaves for a cooler finish.
  • Replace lime with lemon if that is what you have.
  • Add plain yogurt for extra creaminess.
  • Blend in a small handful of spinach; the pineapple and ginger remain the dominant flavors.

Storage

The smoothie is best immediately after blending. It can be refrigerated in a tightly closed jar for up to 24 hours, although separation is normal. Shake or stir before serving. Do not leave a dairy-based version at room temperature for more than two hours.

Frequently Asked Questions

Can I use ground ginger? Fresh ginger gives the cleanest flavor, but a small pinch of ground ginger works in a pinch. Add it gradually.

Why does fresh pineapple sometimes taste bitter with dairy? Fresh pineapple contains an enzyme that can change dairy texture over time. Drink the smoothie promptly or use cooked/canned pineapple when preparing it ahead.
